Cornbread (no flour or sugar)

  • 2 eggs
  • 1/4 cup corn or other vegetable oil
  • 1 3/4 cup whole milk
  • 1 large jalopeno pepper diced small (optional)
  • 2 cups cornmeal
  • 2 1/2 tsp baking powder
  • 1 tsp salt
  • 1/4 tbsp black pepper (optional)


  1. Preheat oven to 450° – preheat baking pan with butter, bacon grease, or vegetable oil. (12-inch cast iron skillet). Beat eggs in a mixing bowl. Add remaining ingredients in order listed; stir until well blended. Pour batter into hot pan and bake 20-25 minutes or until golden brown.

    Insert toothpick after 20 minutes. If it comes out clean, cornbread is done.
