  • 3/4 cup cornmeal (Dixie Lily medium grind)
  • 1/4 cup corn starch

Recipe Notes

Lay fish out and season w/salt, pepper, and garlic powder to taste.  If fish is too dry for seasoning to stick, use some Crystal hot sauce on it to act as a binder.  It doesn’t make the finished product hot and spicy.

Coat fish filets w/cornmeal mixture and deep fry for about 3 minutes @ 350°.  Whole bream and catfish take 4-5 minutes.
